From February 12 to 16, 2024, the Jožef Stefan International Postgraduate School, in collaboration with the Jožef Stefan Institute, organized the workshop titled “From Food Waste to Sustainable Building Solutions.” This workshop received support from the Slovenian Ministry of Cohesion and Regional Development as well as Norway Grants. On February 13, 2024, practical laboratory work on the potential valorization of food waste was conducted, led by Dr. Lidija Strojnik from JSI. The session commenced with a presentation on innovative valorization processes and safety assessments of food by-products, which also included an introduction to the WASTELESS project.
During the workshop, participants actively took part in a laboratory session where volatile organic compounds (VOCs) from selected sample of apple and potato peels were analyzed by GC-MS. The practical experience provided a deeper understanding of the volatile composition of food waste and underlined the importance of precise analysis for refining valorization processes. The workshop aimed to promote collaboration and sustainable solutions for transforming food waste into valuable resources, contributing to a greener and more efficient future. In addition to this workshop, similar events on food waste topic were held throughout the week.
